Drying spinach is second only to freezing, in preserving nutrition for long term storage.
When drying spinach, avoid heating over 100 degrees (F) (destroys nutritional content).
1. Thoroughly rinse spinach and remove stems.
2. Dry spinach until brittle (about 10 hrs) at 100 degrees (F) .
3. Keep dried spinach in an airtight container that's clean and dry. Avoid discoloration by storing out of the light.
To rehydrate dried spinach: Cover with hot water and a splash of lemon juice. Let sit for 15 minutes.
Suggestions: Use dried spinach in casseroles, soups, quiches.
