Learning how to dry tomatillos from the garden is:
Drying tomatillos is second only to freezing, in preserving nutrition for long term storage.
When drying tomatillos, avoid heating over 100 degrees (F) (destroys nutritional content).
1. Remove tomatillo husk and stem, and rinse fruit.
2. Slice tomatillos in half.
3. Dry tomatillos until leathery and raisin-like, at 100 degrees (F). Note: this can take a few days, depending upon the tomatillo size.
4. Keep dried tomatillos in an airtight container that's clean and dry. Avoid discoloration by storing out of the light.
To rehydrate dried tomatillos: cover with hot water and soak for 15-30 mins.
Suggestions: Dried tomatillos make a tasty snack, if you dry them after the fruit's ripened. Rehydrated tomatillos are good in salsas.
