How to Dry Tomatoes
1. Rinse tomatoes, remove stems.
2.
If small tomatoes (like cherry or small plum tomatoes), halve. Otherwise, cut into slices ½” thick.
3.
Remove seeds.
4.
Dry tomatoes until brittle, at 100 degrees (F). Tomato halves usually take around 3 days. Slices take around 1 day.
5.
Keep dried tomatoes in an airtight container that's clean and dry. Avoid discoloration by storing out of the light.
To rehydrate dried tomatoes: Cover for with cold water for 30 minutes.
Suggestions: Use dried tomatoes in stews and sauces.
