Learning how to freeze potatoes from the garden is:

Cold storage is the common method of long term storage for potatoes. However, for those that don't have a cellar, or that would like a backup method of storing potatoes, freezing potatoes is a good option.

Step by Step Instructions
How to Freeze Potatoes

1. Wash potatoes and dice. 
2. Cook potatoes in boiling water until nearly done (not quite tender).  Remove and immediately place in ice water.
3. Drain. 
4. Place potatoes in freezer bags, remove air, and seal. Label and date. 

The maximum suggested time to freeze potatoes (for best flavor and quality) is 6 months.

Suggestions: Use potatoes in casseroles, stews, soups, or mashed.
